Those epigraphs/quotes at the beginning are kinda just extensions of the way Titles of episodes work. They are what you should be looking for or taking away from the episode be it general themes or iconic quotes. E.g. s1 ep 6 "all the pieces matter" tells the audience to focus on all apects of the show to follow the plot whilst also being a reference to the chess board theme.
