Velvets weapons are supposed to be "Hard Light Dust", the same kind of dust they use to make the energy barriers at the stadium, so instead of fire and lightning its physical holograms, as for her semblance it allows her to mimic the fighting styles of others, she cant use their semblances though.

Hopefully the people who try to out you for not being 100% observant can understand that there a lot of things happening at once and it takes time to take it all in. Also, Yang didn't take out the mech, when Ironwood's ship crashed it deactivated the whole army as that was the main control ship. The yellow stuff coming out of Yang's severed arm is her aura trying its hardest to heal and stop the bleeding.

Velvet's weapon is a Hard Light Camera/Printer. She takes pictures and can then create fully functional copies of any object in the photo. He semblance is basically memetic memory, letting her copy the movements and actions of others, but with the added ability of enhancing her strength and speed to match those of the person she is mimicing. Every Hard Light Photo can only be used once though (go back a few episodes and rewatch when Velvet is showing Ruby her pictures, see what the focus of the pics are)

If you notice the Yang vs Adam "fight" if you call it that, it was the final moves from the Yellow and Black trailers meeting each other., also all of the moves Velvet uses, have been seen before in previous fights. Her semblance, as explained by Kenneth Peterson, is a form of mimicry she is able to copy techniques and moves that she has witnessed nearly flawlessly.

And as for the sword that Wiess has, if you recall to the conversation between Winter and Wiess in Vol 3 Chapter 4, Winter mentions "Summoning" all Schnees' can summon not only glyphs to help them in fights, but also summon opponents that they have defeated in particularly important battles, battles that "made her push past who she was and become who she is."
