ok so now that you have been introduced to all 3 types of devil fruits I guess it's time for devil fruit school since they don't really explicitly explain it in the series. Devil fruits are divided into 3 types Logia, Zoan, and Paramecia. Logia types are like Luffy where the structure of their body is physically changed to match their power. i.e. luffy ate the gum gum fruit so his body is made of rubber and smokers plum plume fruit so his body is made of smoke. The next type is Zoan which you just saw with Dalton allows the person to transform into that specified animal ox ox fruit can turn into an ox. The last is paramecia which is like hodgepodge of different things that don't fit into the other two. Mr 3's wax wax fruit would go here because even though the wax comes his body his body is not made of wax. and that's devil fruits in a nutshell.

Luffy isn’t a logia though. Logia’s are specifically more elemental. Even Oda himself said that luffy is a paramecia all logias have the ability to fully become their element. Meaning they are untouchable within normal means. And all logias share the fact that their powers are not form specific. I.e smokers smoke would normally dissipate if it was normal smoke. Luffy can both be touched and has a power that would hold form naturally.

Luffy is a paramecia. They do explain it slowly. You just have to pay attention. Logia: the person can’t be touch by normal attacks. It’s about natural elements like Smoker with smoke. Zoan: the person transforms into another species. Example, Human to Animal or animal to human or both hybrid form. Paramecia are all the other Devil Fruit’s abilities that are not zoan or logia. It is the most common of all types of devil Fruits.

Zoro spent about 7 hours doing those in the snow shirtless, coat-less and shoe-less after swimming in the ice cold water. I think there was probably enough time for him to do those, it depends on how far everything in the country was to each other.
