I would argue it's *because* they're watching you; a different kind of "observer effect". Years ago I read that the best way to not spill like, a bowl of soup that you're carrying is to not look at it. Your body has a kind of internal gyroscope that will keep you in balance, but looking at it makes you overthink and overcorrect. I've tried it several times and it really does help. So maybe someone looking at us also makes us overthink and overcorrect our internal gyroscope or muscle memory or whatever.
