Fun fact: the first time I ever ate an entire pineapple in one sitting, I didn't know they're slightly pinkish on the inside! Then it turned out they are not pink near the core, it was my gums bleeding, and the blood dyed the core.

I'm allergic to pineapple but heard that you can get some acidity and stringency out of it if you soak it in salty water for while.

Pineapples, fresh ones, have a protease named bromelain. Among its other uses, it breaks down animal proteins. A little of it doesn't do much, but the more raw pineapple you eat, the stronger the concentration until it starts burning the outer layers of skin in your mouth. Heating the pineapple even just a little will destroy the protease (this is part of the canning process, of course, so canned pineapple will not react in this manner).
