Yeah gore and even jotaro smoking are censored in some versions, you can find the show uncensored, think they are from the blu-ray releases? those releases also have redraws of some shots.

Crunchyroll is censoring pretty much everything: blood, gore, cigarettes. It gets pretty annoying. Probably best you watch Jojo from Gogoanimes.org or any other site. It's more enjoyable watching it without shadows since they get in the way constantly
