Glad to see your still enjoying the show as much as you are despite Madoka being how she is, since it really can be frustrating with her sometimes. Your totally right about Madoka being frustrating and especially about how stupid it was to throw away the soul gem. But just keep in mind that her being around for witch fights is a safety measure, she could make her wish right there if she needed to save sayaka. Also keep in mind that becoming a magical girl is essentially condemning yourself to a life of constant life and death struggle just because someone your close to makes that decision doesn't obligate her to do the same, Homura put it best "don't confuse gratitude for responsibility". And lastly Kyoko and Mami made a similar and really good point that applies to the Madoka and sayaka situation in that doing something like this wish for someone else without asking them or thinking about how the person your doing it for would feel about knowing what you did is risky if not wrong. Like how could you pay someone back who essentially sacrificed their life for you when you didn't even ask for it, is gratitude enough or are you expected to make the same sacrifice as them just because they did it for you? Anyway this show is littered with moral grey area but that's a big part of what makes it so engaging.

Does the actual lore of this celebration tie in to the story much? The scenes where they mentioned it are kind of a blur to me now because I had no idea what Walpurgisnacht was but if so then I'll definitely peep the wiki to learn more about the connection there

Those are some really great points and I especially like the "don't confuse gratitude for responsibility line". I guess to word it my thoughts more accurately, I don't think that she is obligated to become a magical girl just because they are friends. I think that it is a bit naive for her to think that she can help Sayaka much at all from the position that she's in now. Mami died in almost an instant which shows how quickly a fight can spiral out of control and if that were to happen to Sayaka she couldn't really do anything to save her. Sure she can always make the deal with Kyubei but if it were to happen at the same speed that it happened to Mami, I think that Madoka would be too hesitant or maybe even too awe-struck to make the decision in time. I ultimately just don't like the fact that she wants to be so involved with these dangerous situations without having to face the consequences that everyone else is suffering for becoming magical girls. It's almost like she is just sitting in the sidelines idly watching those around her fight with their lives on the line. I mean imagine how different things probably would be if Madoka had already made her decision and started fighting side-by-side with Sayaka. Now with all of that being said, I still love the story and characters very much. Just as a viewer I'm a bit frustrated with Madoka's decisions (although that does make this story much more interesting for me as well)
