Okay I binged and got caught up on your Fate reactions. I don't know if anyone has explained this to you in regards to Grand Order or not but you are right that you need to put aside most of what you know about Fate so far at least in terms of servants and masters. Grand Order is a more unique series in that you actually see Servants being used the way they are meant to be used. As agents of the Counter Force. You might know that Servants don't exist solely for the purpose of being summoned to fight holy grail wars they already exist for a different reason and mages just found ways to summon and use them for their own purposes. The real purpose of Servants is to fight against threats to humanity which are what the singularities are because these are distorted points where stuff is happening that isn't supposed to happen. Chaldea isn't the only one trying to fix the problem the counter force is sending servants to the singularities to try and fix it too. These tend to be referred to as "Rogue Servants" meaning they don't have masters because the counter force is basically their master and the world is providing them with the mana they need to function so they don't need masters (though working with a master like Fujimaru does help since they can get stuff like boosts from command spells). It's actually very rare in Grand Order to meet a servant that has an actual master like you think of from Stay Night and the other series. As for the girl that looks like Rin... Well some others might have explained already but if they haven't I'll wait a little longer until she's properly introduced to offer an explanation if you would like.
