- carbonara - it's actually an egg yolk based sauce, the sauce created by mixing a raw egg yolk into the cooked pasta, making it creamy and pale yellow - Koreans, however, do carbonara with a cream sauce - tuna hoe (xD) - raw fish, what you would call sashimi, Koreans call hoe, pronounced "hweh" - jellyfish salad - think more of it as a pasta salad with long noodles - the jellyfish is like long strands of al dente pasta, with a slight crunch as you chew - it has no flavor though, which is why you toss it in a salad with a strong sauce (the times I've eaten it, it had a horseradish-based dressing, extremely refreshing) - the hubby ate this on several occasions before he realized what he was chewing on was jellyfish, he thought it was noodles - it really has no offensive taste or texture to it - in the behind the scenes, Namjoon made a passing remark about the seasoned skate looking delicious - skate is a ray, like manta ray - the "wings" are what's harvested as food, and, in the Korean fashion, "hongeo" is allowed to ferment (it excretes urine through its skin) and then served raw, in slices like sashimi - it is considered EXTREMELY foul smelling (many cultures have overly fermented and horrifying fish, like lutefisk, tepa, and hakarl, as part of its culinary heritage xD), and many have said hongeo tastes like ammonia, fizzy and burning in the mouth, and most people, even most Koreans, can't bear the smell nor taste of it - but it is still a delicacy, and some older people, and daring young people, eat and enjoy it quite a bit - knuckle bone soup - beef knuckles (ball joints) - has lots of good stuff to help heal and strengthen your bones and joints, so it is used to make a bone broth - the Korean soup is made by boiling down the beef knuckles for a LONG time (my mother always made hers overnight) - it's boiled long enough (and the fat scooped from the top) that the broth is a creamy milky white - it is eaten either over noodles or with rice, topped with a bit of shredded beef, and seasoned lightly with a bit of salt, pepper, and freshly chopped green onions - a very clean and light meal, with kimchi on the side - it is good for when you've just woken up or feeling sick to your stomach as it soothes as well as gives you a ton of good nutrition (which is why bone broths are highly touted and just recently gained a lot of popularity)

Landon, you need to come to Asia for food alone! This kind of buffet is not uncommon where I come from. Jelly fish salad is yummy by the way. Watching them eat just gives me pure joy. I can't be with anyone who doesn't enjoy food as much as them now. It never eases to amaze me how unspoiled they are. Being the global superstars they are, they still get excited by any food that they eat. Like the grin on Tae's face, they can't fake it. It's real. I love them. I'm like a mum watching my children eat happily. It's such a joy!
