Simmer 500ml of ruby port until it's reduced by 50%. Add 50g of white sugar, stir. Should now be a moderate syrup. Add 100g each of raspberries, halved strawberries, and blackberries. Simmer until fruit is softened. Serve over sponge cake with good quality vanilla bean ice cream. Also goes great over waffles, pound cake, pancakes, etc, but angel food soaks it in better.
