I agree there is something really special and unique about early one piece animation style. If i had to choose any part of one piece to be redone, I would actually say from fishman island to dressrosa. Also, i'm not sure if you're aware, there's a one piece ova from 1998 (before the anime came out) with different voice actors and a very different animation style to what we saw at the beginning of one piece. I think you might really enjoy watching it in your own time to see how the anime could've turned out. it's called one piece: defeat the pirate ganzack.

Another great episode to watch would be Ep 907 “20th anniversary”! It’s virtually the pilot episode of One Piece, it’s crazy to see how different things were at the beginning compared to how things actually turned out.
