Personally, the two webcomics I'm currently following are Misfile and Questionable Content. One I think did really interesting things, it is finished, was YU+ME: dream. It was something that was fun to read all the way through in one night but I think would have been infuriating to read as a weekly webcomic, for reasons that would be very spoilery to go into.
