I have the weirdest impulse to suggest Nergigante from Monster Hunter World. An incredibly savage, nearly unkillable apex predator who's role in the ecosphere is to keep other Elder Dragons from getting out of hand... by killing and eating them when they become too powerful. It's the logical end point for a hunter who's fascinated by dragons and utterly committed to protecting the world from them.
