Part 3 changes the entire game with stands. Battles become far more interesting with them. The further you get into JoJos the more bizarre it gets. It's nice going through and seeing how the series evolves as it progresses.

To answer your question about why it's the Joestar curse and not related to the mother. I think it's the feud between Jonathan and DIO that placed the remainder of the Joestar bloodline to deal with the mess that was created then. Jonathans confrontation with DIO is what led to Joseph actually fighting the creators of the stone mask (pillar men) but now that DIO is in the picture again Joseph and Jotaro has to clean up the mess that wasn't solved from part 1. Like even though DIO wasn't present in part 2 he was indirectly responsible for the discovery of the pillar men. This is mostly done to show that regardless of whether DIO is present or not his influence is long lasting due to his feud with Jonathan.

the color changes are just stylistic color schemes to add more style to the scenes, been there since part 1 (they're not literally changing colors, just like how Kars hair doesn't actually change colors). You can tell by looking at the background or the main cast's hair, they all have different colors.

As @Hypemaster said, it's just a stylistic choice that has been adopted from the manga, they didn't actually change colours. Also, the reason Dio was in the coffin was because he was in the other compartment. U must have missed when the narrator said that the coffin had a secret compartment in it. Dio must have hid in the coffin before the ship got destroyed and when Erina was saved at sea, they must have left the coffin there in the ocean, sinking to the ocean floor with Dio still in it.

Your reaction was the same as mine when i first saw this allona, dio out here doing catwalk poses in Jonathans poor body looking in the mirror admiring himself but at the same time its why dio is my favorite villain because he went that far
