To answer adorkable's question - it took ten minutes to make his brining solution, he the bacon in it, put it in the fridge and left it there for five days. So he had five free days minus about 20 minutes, 30 if you include clean up, to follow people around. Air drying means removing the bacon and hanging it from a hook in a temp contolled room, 5 minutes there, so that's another day to stalk. Smoking the meat means setting the meat in the smoker and getting the wood to smoulder like charcoal - an hour - then you have 4 hours to stalk, and hour clean up and put the bacon away, and the rest of the day to stalk.
