At a restaurant I worked we made these lamb meatballs that had beef tenderloin, lamb shank, and bacon we ran through the meat grinder, as well as saute onions in a wine reduction, and about 12 different spices including harissa. They were incredible, but a pain to make. We ground about sixty pounds of meat at a time and then I had to roll them by hand to 2 ozs each. But because its the midwest they used canned marinara for the sauce, even though I, an italian, can make better sauce in half an hour
