Yea, he didn't figure it out last ep, he thought it was a dream or premonition. Also, he lacked any knowledge about the killer, the motive, etc. Finally, if you remember, the first time he died, it was late at night. This time, it wasn't even dark out yet. So even if he assumed everyone there was going to die, he probably thought it wouldn't happen for at least a few more hours. Also, the shopowner's daughter wasn't saved by him this time around, but was saved by someone else. It's the series' way of telling you that certain things will happen regardless of whether Subaru gets involved or not. That means that even if Subaru walks away without ever meeting "Satella", there's no reason to believe she won't still die by Elsa's hand while chasing for her stolen insignia back. It's not that she didn't die in one timeline, Subaru just died way earlier.
