Part of the reason you're noticing less details could be because the creator of Food Wars always had a professional chef to consult about the food in the show and how to make it, however during the final arc she had to take a maternity leave so the cooking and details are harder when you don't have a professional to consult. This can also be why Food Wars lost a lot of popularity during the last season.
