I guess you didn't see but that priest casted some dragon looking spell or used some item that hit shal* just before she hits the tank and the priest with a spear... It's kinda unclear so i could understand if it was missed.

The mission shalltear was given was to bring any people who could use martial arts, Brain is one who uses them and is good (in comparison to the people of this new world) and bring them hostage to understand this "new" power. The reason shalltear was worried about being scolded is because she was supposed to be discreat, in other words, without others knowing it was her or someone from Nasarik. Finally, the "betrayel" was because as Ains said from experience in Yggdrasil, her name in the Master Source was red, meaning she was mind-controlled by a third-party, in this case, the last batch of people she was fighting. Although her nature as a vampire prevents her from being mind-controlled, it happened...

Another explanation about something talked in the beggining and end, Healing Magic hurts the undead and heals the living, Negative Energy (Negative Magic) heals the undead and hurts the living. That is why the red healing potion hurt shalltear. (Ains carries those because, probably, in the game as a player the red potion worked on him or it was for his teammates).

Great reaction! For the speculation before the episode started about why Nabe was holding back, you got it she did so since Ainz was having them hold their personas, so she had to win using what "Nabe" could use instead of "Narberal Gamma" until he commanded otherwise.

You were right about shalltear losing control. In the LN they showed her inner monologue, she should have been leaving those adventures alone per Ainz's order but she can't control herself in that form. And they were only supposed to kill criminals and capture people with martial art skills. Also a little detail that was in the LN but not in the episode was shalltears inner monologue when she clashed with that guy before she got brainwashed: "Shalltear was surprised and had no levels in dedicated warrior classes, so her assessment of her opposition’s strength told her that he was not only stronger than the Vampire Brides she had brought along, but stronger still than Solution, the Pleiades battle maid."
