Adam Shapiro is not a food critic. He's the chef de cuisine (CDC) at Ever, Chef Terry's restaurant where Richie staged last season in the Forks episode. Adam was the chef who came out and yelled at the entire staff about the smudged plate and he ended his rant by yelling, "Now get back to work! Fuck you, Garrett!" to which Garrett responded, "Yes, chef. Fuck me." The name of the restaurant was never mentioned last season, but it's Ever, which is a real Michelin starred restaurant in Chicago (the Forks episode was filmed there). Anyway, that's who Adam Shapiro is on the show, and he is played by an actor who is also named Adam Shapiro, but it's not really a fictionalized version of the real Adam (who is not a chef, though he did launch a pretzel business during the pandemic).

When Richie asked Frank about whether his parents helped him buy his house, he was trying to determine the source of Frank's wealth (that house was definitely a few million dollars), and when Frank responded that his parents were teachers and divorced, what he was saying is that he didn't come from a family with money, and he experienced actual economic anxiety in his formative years. It was kind of a flex in him more or less saying, "Yeah, I paid for this house with my own money because I am very successful, not because it was handed to me" without actually saying that. But he also knows that bragging about oneself in front of their fiancée's amicable ex-husband is a pretty douchey move, which is why he cut himself off before he started bragging. I think he genuinely is trying to keep things cool with Richie and he seems like an actual good guy.
