Koichi's stand is based on cell, and his hair changing is based on super saiyan. Yall were on the money for that. Also stands are a reflections of one's soul. The change in Koichi is just an evolution of his character that spurred the stand to evolve from the egg rather than the other way around. Strong souls tend to have strong stands.

The difference between the sounds: The one on the dude were attack sounds and they were just echoes, not necessarily attacking him. And the mum got hit with an echoing sound of him saying “Believe me”

The whole episode I kept thinking that Koichi's appearance when using his stand reminded me of Yami Yugi from Yugioh. Even the personality switch is a similar situation. Also both Koichi and Yugi are smart, short, and regularly get bullied.
