Seeing as most of the cultural influence in this series is Asian/Oriental and blonde hair is extremely rare in Asian races, I think that's why. Funny enough, it's a race thing!

Because Aang wanted to go back and not turn his back on “his people” when they were on the ship and she wanted him to conceal the fact that he was alive. I know it was a part of a greater good but it made her slightly hypocritical when they were trying to prioritize the mission

I always thought it was cool how even on these bottle episodes they're still winning smaller victories against the Fire Nation. Like the factory seems like a speed bump but it appears to be a steel foundry meaning it probably supplies their war machines. Haru's episode in book 1 mostly focused on the prison aspect, but that rig was a labor camp. All these facilities they're destroying are shifting the tides of the war little by little.
