So roshi, imagine it as like a martial arts. You perform the motions that is how you bend. If you look closely each bending has a distinct style in how they fight and bend.

I mean, the motions for each element are different if you watch them. water is very very flowing as it's guiding the water the way you want it, air bending has a lot of similarity in that it tries to flow, but has much quicker and abrupt movements, usually in the form of making circular movements, almost twisting the air constantly, earth bending is probably the most "blocky" since it's mostly about moving stone, and fire is abrupt burst in a similar to earth bending, but since it's generated at the point doesn't require the startup animation of finding earth, rather can be a lot more like punches/kicks. The opening of the show showcases these differences pretty well.

Of course these are generalizations, as there's overlap of course, but yeah the opening gives you the gist of what each element's style of bending is like

It is actually explained later as to why Aang picks up waterbending so fast, wait till he has to learn the other elements with core philosophies not known to an air nomad monk.

You mentioned that the motions were the same. They are not. They creators actually had real martial arts experts come in and do different styles of martial arts, that they then filmed and later animated. Every bending is based on their own distinct martial art. For example waterbending is Tai Chi.

This episode clearly takes place in the Fall, so was this suppose to be before the winter solstices episode 🤔.

Winter solstice is supposed to be December and I just looked up how long does it can take for leaves to change color and all fall......it takes months O.O Even right now, the leaves outside my house are still deciding if they want to stay green or change color and fall already! >,< And it's halfway through November. Plus, this is a different world with varying temperatures. The hotter it is, the longer it takes for trees to give up the leaves. We were just in the Fire Nation. And they're wearing their "eh, it's a little cool but it's okay" clothes. It's possible the chill for them doesn't start until closer to the Winter Solstice, meaning the leaves are still deciding their color xD
