To answer a few of your questions at the end: yes there was more to Fred’s death in the book. Same with Lupin and Tonks. Harry was actually named their son, Teddy’s godfather and helped take care of him since his parents died. With Neville, there’s a lot more to it that isn’t explicitly stated in the movies. In order to understand here’s a few things to know: Harry was born July 31, Neville was born a day before him on July 30. Professor Trelawney told a prophecy shortly before they were born that said that “the person who has the power to defeat Voldemort will be born at the end of July. Neither can live while the other survives…” Due to this, both Neville, Harry and their parents were in danger and went into hiding. Voldemort literally just chose one to go after himself which ended up being the Potters. His followers (Bellatrix) went after the Longbottoms. In an alternate universe had Voldemort went left instead of right, Neville would’ve been The Chosen One. So him killing the snake at the end is pretty symbolic, he could’ve done what Harry did and defeated Voldemort also. It just wasn’t his journey.

I’m happy you stayed the course. I thought I loved the movies then I listened to the books. Sooo much more. Dumbledore did receive a funeral. Harry advocated that they keep the school open until after the funeral so students could attend.

A patroness if conjured by your happiest memory. For Snape that was “Always” Lily. Lily’s patroness was a doe and so was Snapes. Snape focused on the dark arts, Lily didn’t like the people he associated with. James was a bully until he grew up. One day while being bullied Snape called Lily a mud blood. As you can imagine there’s no turning back from that. 🤨 Although he was sorry. He never got over her and the kindness she showed him.

Snape grew on me in the end. I'm happy they explained more of his backstory. I'm not 100% sold on his redemption tour yet. But I can understand him a lot more.

Draco, after the battle for hogwarts, mostly because Harry saved him in the room of requirement, denounces his family views of purebloods being superior and he and his wife raised their children to believe they are equal to mixed blood and muggles.

When Harry died, Draco's mom asked Harry if Draco was alive. He nodded his head, yes, and that's when she said that Harry was dead. She purposely lied. The part with why Snape's Patronus was the same as Lilly's, if I remember correctly it has something to do with how strongly you care about or love a person. Then your Patronuses synchronize.
