"Beef consommé" (con-som-AY) is a French beef soup. The meaning of it as an episode title is a bit obscure, but it may mean that the brothers' "beef" (argument) about Marta has been brought to a resolution (consommé can mean consummated or completed). Some of the subplots have been brought to some kind of conclusion here, because this episode, #13, was the last in the original network order (half a season) and might have had to serve as a kind of series finale.
