Fully agree with the take that all jerseys are boring since late 00s/early 10s. If I had to diagnose the problem, it's that starting around that era, when making new branding concepts teams have had to weigh what they think looks good on a jersey against what they think looks good on a computer and/or phone. Which is not necessarily an easy problem to solve, but personally it seems a little unnecessary to adopt top-to-bottom design consistency rather than creating a wider array of designs that are tailored to jerseys vs web presence vs other scenarios
