It is quite reasonable to brew higher ABV beers. Just need to tweak the processes and yeasts used. All yeasts are not the same. And in fact, there are different strains that impart wildly different noses and tastes to the same raw ingredients, as one would imagine. As well as changing hop/malt profiles, to accentuate a panoply of noses and tastes. Vibes from garlicky to perfume-y to citrus-y, to biscuit-y, to fruit-y (and different kinds of fruit, it's all just esters), yada yada yada. The various chemical products of the fermentation can include a literal biochemistry-lab of concoctions: thiols, esters, butyls, you name it. (In the old days, that meant bad beer %^). Typical adjectives used with these beers include funky, dank, hop-forward, etc. It's incredible what one can do with the 4 basic ingredients.

A very popular style today is the fruited sour, or similar. Often the brewer starts with a berlinerweiss recipe, tweaks things to get into the desired ABV range, tries to control the hop/malt flavors as necessary, then once the "raw" product's been made, throw in fruits, vegetables, and other adjuncts, then either continues with the same yeast or tosses in a different one, and lets it sit again. OMG. Great beers, like fruit slushies/smoothies sometimes, or like the tartest fruit-forward beers imaginable. They are definitely not Reinheitsgebot-approved. But the flavor profiles, noses, and mouthfeels can blow your mind. Definitely a strong style, IMHO %^)
