If I were you, I'd still be afraid of potential spoilers, since this anime is based on the manga, which is already finished, so be careful. Hope you don't get spoiled anything. :).

The season 3 trailer for Demon Slayer has already been released. It'll answer your question of who the next Hashira they'll be fighting with is. I don't know if you're going to replace Demon Slayer with another anime to react to but if you are I'd suggest Fullmetal Alchemist: Brotherhood or Jujutsu Kaisen. FMAB is a classic and widely considered to be one of the best anime of all time. It might also be a little easier to follow along with as the vast majority of fans will tell you the English dub is the best way to watch. JJK is a newer anime and only has one season so far as well as a movie that came out this year. The second season won't start til next year so it's easy to catch up with. It's a great follow up to Demon Slayer and the animation (it's animated by MAPPA who did AOT season 4) and music are top tier. I think you'd also really love the characters and the humor.
