Small note to help you understand why Aokiji knows where they are headed next. They explained this fairly early in the series and you may have forgotten. On the Grand Line, when they were at the beginning where the big whale Laboon and the doctor Crocus was, they explained that they can pick the first island they go to, but after that each subsequent island is decided by the previous island's magnetic log. So when you go to Island (A), that island's magnetic pole only points to Island (B). So if you go to Island (A), you go on your adventure and when the log is ready, it will only direct you to Island (B). There are lots of other routes that go through a lot of other islands in the Grand Line that the Strawhats won't encounter, which gives you a better idea of the scope of how large the Grand Line is. Because Aokiji was on the same island as the Strawhats, he knows that the only logical next step for them with a log would be that they have to go to Water 7. This is the general idea of the Grand Line for regular people. Of course, Marines and Government officials aren't restricted to those routes as they showed back in Alabasta where there are rare logs that are Eternal Logs, which always points to a specific island.

Just an FYI, people here been hyping water 7 for a looong time. Don’t get me wrong, it is one of the most monumental arcs of anime but it has a relatively slow pace sometimes. Don’t always have high expectations all the time cause that’ll make the experience not as good (kinda like G8 in a sense)

I think my favorite thing about these reactions is when Amenz and Lycan are trying to figure out and piece together the story as much as possible. I feel like a school teacher watching proudly as my students learn and figure out all these hard AF math problems.
