I’m sure that the earlier hybrids were also children, but not necessarily with the specific genetic disorder mentioned in this episode. The one the Roci crew found in the incineretor was definitely a child, as Prax explicitly said. And remember, when we first met Prax on the belter cargo/refugee ship, they said to him there are no children there among the refugees, that is, all children just disappeared from Ganymede when the mirror fell, supposedly having been collected by Mao's men to use them.

There was a short scene showing that when Holden detonated the torpedoes, all the screens in the Razorback went blank. Obviously the same happened on the UN Escort ship, so they couldn't "see" the incoming Roci.
