Did you use russets or wax type potatoes Michael? Curious if there is a difference in drying w/o blanching. Russets are much more starch than the wax or new potatoes. Then try to cook them in a liquid and see what happens. I didnt try with my first batch due to the nasty color, they were the russet type.
