Yes Zoro didn't count the fight because that wasn't anywhere near ryuma's real strength. Think of it this way, if the owner of the shadow is weaker than the zombie was while alive the shadow can't use the body at it's full potential; same way the average Joe wouldn't be able to drive like a pro just because he borrows a pros car. Specially since brook's fighting style is different from a samurai's. If you notice brook's shadow kept trying to stab with ryuma's sword even though a samurai's sword is meant more for slashing. Now brook lost the fight because he was fighting a physically stronger version of himself, but that was not the full potential of that body.

This fight hits different with the latest chapters. Although, technically it's just Brooks shadow and not Ryuma.
