The power dynamic between Cole and Rhaenyra makes their relationship slightly more problematic. She made almost all of the decisions that got him to where he was, even passing over other, more influential knights to raise him to the Kingsguard (who actually take a vow of chastity, even though relatively few members honor that). If he rejects her, what are the consequences of that? Can he say no even if he wans to? As for Daemon, I figured that his reason for lying was simply to hurt Viserys. He's angry with his brother. Viserys didn't name him Hand of the King when they were younger, Daemon had to marry a woman he didn't want to marry, and he saw Viserys sending help for him as Viserys trying to steal a victory that was rightfully his. By now, he's just out to try and hurt his brother, and what better way to do that than to try and sleep with his brother's daughter? It's just icing on the cake that he actually wants Rhenyra, and that her being "sullied" would likely cause other lords to shy away from marrying her, making it more likely that Daemon would get the chance to.

So the White Hart symbolism is pointing that Rhaenyra's the true heir, since before the arrival of the Targaryens in Westeros, the Stag was considered the animal which represented royalty, and in Game of Thrones books killing the White Hart is considered a bad omen. Daemon shenanigan this time was to let Rhaenyra see a part of the city she never gets to see, so she opened her mind about the world, but also he brought her to that pleasure house so that people would see them flirting together and engaging and thinking that Rhaenyra lost her virginity to him. That's huge because if it were true, she would be ruined and no one would want to marry her now that she's been "spoiled", so Daemon would be the only one who would have the better chance to marry her then. Obviously, they were very into it, but Daemon truly cares for Rhaenyra and didn't expect her to react excited and willing, so that took him by surprise and he grew a conscience all of a sudden. I think in his head, he had this plan, but then when he got Rhaenyra right in front of him, he couldn't really bring himself to really harm her like that. Plus, he didn't need to take her verginity for real, since people already saw them in a pleasure house together, so automatically people would gossip. Plus the Hightowers (Otto's family) really fear a Rhaenyra/Daemon's son because they both are Targaryens so if they united their claim to the Iron Throne would be nearly impossible to beat. So they can't have those to joining their claims, because otherwise they wouldn't be able to put Aegon (Alicent kid) on the throne. The thing with ser Criston Cole is that he swore an oath (which included chastity) when he joined the Kingsguard and he chose to break it by sleeping with Rhaenyra, so he could be executed for it. Later Rhaenyra has no choice but to lie in order to protect everyone involved: herself, Daemon and ser Criston Cole, who risks to be killed for breaking his oaths. So they all messed up here. About Daemon, his character is so interesting, because it's clear that he wants power, but he also has feelings for Rhaenyra and has a complex relationship with his brother, wanting his love and attention, so he's always pulling some shit, even if it's negative, to have any kind of interaction with his family. Ps the moon tea is a medieval Plan B they used to avoid/stop pregnancies.
