About the military thing... South Korea is still technically at war with North Korea so mandatory service makes sense as a preparedness measure. It has gotten much shorter and more flexible over the years As for release date footage for the members, there was/ probably still is a prejudice about celebrities doing civil service instead of active duty so SUJU intentionally brushed over those members.
