She can afford to change her armor like that because it's made of magically reshaping metal that she can change at will. :)

Character: Celtil the Acquisitioner, Angel Paladin

Born as aasimar on Outsider Island, Celtil was raised to fight in the war between celestials, fiends, and elementals that has been ravaging her island for longer than anyone can remember. Over time, she distinguished herself in battle and became a commander in the celestial army, ascending to a more divine form that granted her wings and other divine powers.

Compared to her fellow celestials however, Celtil didn’t grow more zealous as she climbed up the ranks. Instead, she grew more and more resentful of the gods that started this war and refuse to end the endless fighting.

While she was on a mission, she was approached by an individual that offered her the opportunity to rid the world of the gods and let the people rule themselves without fear of divine punishment. All she needed to do in exchange was to serve a dark organization that abducts and sacrifices people.

She agreed and shortly after being accepted into the organization, she deserted from the celestial army and devoted herself to this new group. Joining the organization, she was offered power in exchange for a permanent sacrifice. She chose to give up her hands, gaining special shields to replace them. With her newfound powers, she promised to do everything it takes to save civilization from the gods that wronged her, even if it meant sacrificing humanoids in elaborate rituals to gain enough power to achieve her goals.

Celtil’s armor is made of magically responsive metal that she can reshape at will.

Going into battle like that, any spellcaster against her is going to have to make a pretty high concentration check to do anything; everyone else will have to roll for surprise.
