Open caskets provide a sense of closure that they are, in fact, dead and not coming back. It allows the grieving to make sense of it in their mind, to see it with their own eyes, and then to move on. Because funerals happen so quickly, I think it's common to still hold onto a sense of disbelief. How could I believe that my mother, (father, friend, etc) who has been there for as long as I can remember, is suddenly just... gone, poof, forever?? I'll believe it when I see it. Object permanence and all that.
