Wow, I can't relate more with the sentiment! People add too much chocolate to vanilla these days. I grew up with the Wii Version of New Super Mario Bros. The final boss was OVERWHELMING. It shocked me for WEEKS and MONTHS after it finished (you should look up the boss of the final castle if you haven't --- link: https://m.youtube.com/watch?v=Ihei0ngHHdU). Mario games these days add too much DLC, "standalone original characters", more maps, just plain more content. I dislike this trend. I want my games to have a few, but that few MUST count.
