In Les Moore's first appearance, this is all we see of him:

His full appearance, comes much later, in Season 14's "Old-Yeller Belly". His name isn't revealed until Season 31's "Way of the Dog." It's a slow burn for Les Moore, maybe in ten years we'll discover he has a family or something. Anyhoo, I watched all three of his episodes:

1) It is JARRING going from a Season 1 episode to a Season 31 episode. Some of those voices...change, significantly.

2) "Way of the Dog" seemingly had like four "new" characters. If we ever get that far we'll breeze through episodes I think...

3) I am now the #1 authority on Les Moore and I can tell you: Les Moore is mean.

Honestly, there's not a lot to him. He kicks Santa's Little Helper out after he loses his race, then much later he tries to reclaim ownership when SLH makes some money. Later still the family confront him over his mistreatment of SLH. He is an accessory to the family dog and little else. I do find it interesting when these characters return after such huge gaps though! It's odd attention to detail that most viewers don't give the show credit for.

Les is kinda sorta the last new character to speak in Simpsons Roasting On An Open Fire, but I felt like we shouldn't close the door on this episode without one more appearance...
