I don't think mr. 7 and that whole organization showed up before Luffy reached the grand line and stuff. Seems like they're mixing things up but it works well !

Seokjin's Spoon They're going by the manga, not the anime and Zorro said that he met Mr. 7 before he met Luffy. (He said this either in the manga or anime) so I think they're showing scenes that should've been in the anime.

There is also a recut called One Pace that shortens the 1000+ eps to like 300-400 by removing filler etc

I’m late to Patreon but I’ve watched all the way to ep 905 in one piece 🎉 loved all the months and years I spent on that hahaha but it’s way easier to binge it by arc so I would watch one arc then take a break watch other stuff and come back binge another arc it’s way more manageable to catch up that way and now I’m in the the current arc
