Anriku, one thing that was only mentioned in the Light Novel... the Thing about the Chimeras, that Demiurge mentioned.. He only calls it this way because he is sort of trying to raise " Chimeras", creating more powerful beings for more powerful Magic Scrolls, and he trys to do it by mixing all Sort of Creatures together. He trys to find a way to make Magical Scrolls for all kind of things ( you know, the Scrolls they used in Season 1, the Scroll that the Maid with Sebas use to call Lord AInz etc). And for that.... he use Living Humans. He puts people together like cattle on a kind of "farm" and pulls their skin alive from their bodies to make scrolls out of them. When the process is over, people are healed and they start all over again. This goes on until they die by themselves or are abused for other experiments. This is such a fact that is never explained in the anime, just because it is so cruel. Demiurge is probably the sickest of them all.

So it was explained in the LN (apparently) but Albedo's reaction right before the ED visuals came up, suggest that she despises the name "Ainz Ooal Gown" as it reminds her of the other 40 Supreme Beings, which Albedo vehemently despises since they abandoned them. So Albedo does not like that Momonga changed his name to "Ainz Ooal Gown" as she believes that they'll only need Momonga, the one Supreme Being that did not abandon them whatsoever. Lol
