I feel the same about Doctor Who. I wasn't the biggest fan of Davies when he was around, but after a few years without, I sure missed him. He definitely was good at keeping the show stable and consistent As for Sherlock Holmes, my favourite actor is probably Basil Rathbone, while I agree on the definitive series. Steven Moffat's Sherlock almost felt like Dirk Gently at times what with how ridiculously interconnected things get.

When are we going to see a Dracula shared universe?

I agree about Jeremy Brett. Don’t think we’ll ever get better. Even looked as Holmes described. The way they looked at the whole cocaine thing irritated me, but other than that, loved it.

I so am looking forward to this

To be honest, I kind of preferred "Elementary" (with Johnny Lee Miller as Sherlock) over "Sherlock". For a while, I knew that was a very unpopular opinion among Sherlock fans, but I felt that the American show focused more on Sherlock trying to solve each case through trial and error (i.e. When you have eliminated the impossible...). The BBC Sherlock was a fun show, but Holmes seemed to be way too eccentric and "modern" that he didn't feel at all like the classic detective.

Ten years ago Moffat plus Gatis do Dracula would have been a dream project. Now I'm not confident. There an excellent analysis of Moffat's style here - https://youtu.be/LkoGBOs5ecM
