i've heard those eyes being labeled as "sleepy eyes", but it's actually called a drooping eyelid, or ptosis if you wanna get proper. in anime though, it can mean boredom or tiredness, or simply what the artist decided to draw for that character

So you almost picked up on the small details when they were in the restaurant. However Start ordered omelette because Frieren recommended it to him, which is still super nice detail as she remembers what Himmel ordered 80 years ago.

The closest thing you'll find in anime to Frieren is Mushishi imo. The anime itself is really different, but the vibe/atmosphere is the same.
