I didn't notice this on watching but with editing, I realized given the dedication....this was probably an homage to Seven Samurai which bizarrely I watched for the first time a few months ago, what are the odds.

Well that's good timing with your seeing Seven Samurai. The plot of which is homaged/referenced all the time. As you pointed out, the episode of The Mandalorian was one such example. One of the more famous examples is The Magnificent Seven, hence why Hondo was the villain in the episode as he's the Eli Wallach of Star Wars, in this episode particularly, he's Eli's character Calvera who is the villain of The Magnificent Seven. If you're interested, another Kurosawa film you might consider seeing, if you haven't already, is The Hidden Fortress which Lucas has said many times served as a major influence for Star Wars, in particular, the film very much inspired the creation of 3PO and R2. Plus, Seven Samurai’s director Akira Kurosawa also did The Hidden Fortress, which was famously a major influence on Star Wars, mainly the idea of two random bumpkins being our viewpoint into an epic war story.
