Once again, I think you're so accurate with your analysis of the brothers (as far as you can know for now). I do think that Sam's going overboard with the guilt - he hasn't done anything yet. Dean is obviously controlling himself by deciding not to think about it. I think this episode is pretty uninteresting - kind of a 'watch once'. Unfortunately, I think Jared's 'drunk' acting is pretty bad and unconvincing, and Jensen isn't given a lot to do other than make an off colour joke or two. I know you don't like the Dean off-colour jokes and remarks, but you also need to consider how he's grown up. Sam went to college and has socialised with a more diverse crowd. Dean has never been more than a few weeks in the same place, and has lived his life under the thumb of his ex-military father. He already is incredibly honourable and protective, and doubtless will mature. You might also notice that none of his off-colour jokes etc. translate into bad behaviour.
