Hey, there. Loving your reactions to this show. Two quick comments that might clear a couple of things up. 1) Ed and Al have to keep Al's situation a secret because human transmutation is forbidden. If people knew that they had attempted it, they would be in huge trouble. Currently, the only people in the military who know about Al are those who witnessed him being damaged by Scar. 2) Dr. Marcoh's alchemy notes look like recipes, not all alchemists'. Each alchemist has there own way of encoding them, which is why Ed and Al have trouble deciphering Marcoh's notes. (Fun fact that's not brought up in the anime, but is in the manga....Ed's notes are encoded as a travel log of the places he's been.) Sorry for such a long comment.

I'd love to join you on the journey through either of those options. Both are amazing shows. You are right about samurai Jack not being an anime btw. Another show you may like or want to consider may be samurai champloo. :)

Samurai Jack and Attack on Titan are both great shows, and I don't really have a preference of one of them over the other. But...I feel like for your third show, maybe it's better if you do something different? I mean, you already have two "big" shows, as in action-packed, plot-heavy, emotional rollercoaster-y, lots-of-episodes shows, and all the shows you're looking at are roughly within the same genre. And from your reactions to Avatar and Fullmetal, I get the feeling that you guys might enjoy a show that's a bit more light-hearted. Plus, now that you're just discovering the joys of anime, I would suggest that you explore the vast amount of genres within this genre, rather than just staying within the Shounen genre that both Fullmetal and Attack on Titan are in. Off the top of my head, I'd suggest something like Silver Spoon (Gin no Saji), or Yuri on Ice. Samurai Champloo, like Scott Friedman suggested, is a really good one too. Anyway, just my two cents :P

How about Death Note? It's an anime about two geniuses outsmarting each other. (Netflix is doing a live-action series, and it's so white wash :/)

AHAHAHA, as an engineer I found Jane very funny at the beginning. It was adorable; don't worry Jane you don't need to know what an engineer does. There are lots of different types that do a whole bunch of different things. BTW, Death Note has my vote without question. AoT is good but I'd have that replace FMA when you're eventually done with that.
