Just When I Thought I Was Out...

While the first episode can be jarring....it is the most important episode of the season, because none of Carmy's behavior makes sense after without it. You said it's about the past, but it literally is all about the future and how he acts now. Even this episode, his new philosophy and behavior is based on what he thought about that night. And Carmy may be hoping or believing he went into his past so he can be like Olivia Coleman or that nice old man....but in reality he may be taking more cues from asshole Joel McHale. "Subtract" "Never repeat ingredients." "Fuck You." And he says he can't waste time, which Joel accused him of. He's the one in his head he wants to impress, and unfortunately maybe, be like. Obviously hard to see that though on a first episode.
