Apparitions are Ghost or Spirit beings. They are not necessarily human in nature, but they aren't demons. Demons are more like beasts and monsters. That is sort of a simplistic way to think of it, but hopefully it gives you a better understanding of the difference.

Just to clarify some non-spoiler confusion you guys had in discussion after the episode: (1) demons and apparitions are terms used interchangeably in this show/world (2) Toguro didn’t say he was created by a human, he was saying to Helen, the genetically engineered demon he was killing, to blame the humans that created her. (3) Hiei is a demon and always has been, regardless of his dream about the Jagan Eye implantation. (4) Koenma’s Ogres aren’t really demons, they are denizens of Spirit World, not Demon World.

-Hiei and his sister were born Demons -Apparition and Demon are interchageable in this series. They mean the same thing. -Koenma has Ogres/Oni working for him and they are distinct from demons. -Toguro saying "The human that made me KILL!!!!" is him referring to Torukine, the mob boss telling him to kill Helen. -The scene with Hiei on the operating table is him recieving his 3rd eye, it didn't make him a demon, he was already a demon.

Apparition is a very general term that is used to describe spirits and demons. Spirits and demons are more specific terms sort of like how we describe ethnicity/race.

I don't think apparition and demon are necessarily the exact same, more that it is a translation issue where the English terms don't have the same implied meanings as the original Japanese. I haven't gone to the subs to actually verify this, but my assumption would be that apparition is being used to translate "youkai", given that Yukina is literally a Yuki-onna. And demon was I think probably being used for "mazoku" or maybe "akuma". All of these have slightly different implications mythologically or folklore-wise, just like "demon", "ghost", "devil" etc may refer to the same thing but also imply slightly different things (and some mythos specifically make distinctions between them). EDIT: If I had to reach for a distinction it seems to me that youkai are more like evil kami, they seem to generally be the spirits of dead people or of objects that have become malicious and powerful for whatever reasons, while mazoku are more your traditional fantasy isekai demon race types. But I don't know that that really applies in this case since Yukina is herself more the latter.

The slip ups in translating from japanese to english is the only bad thing about the dub, i.e the issues with using apparition and demon, not just calling Yukina a yuuki-onna, and making some stuff "cleaner" for western audiences. The company who did the dub took some liberties, like inserting a hilariously weird anti-drinking spiel from a character randomly. The next episode particularly has some pretty egregious changes in meaning and intent in at least one conversation, and I only caught stuff like that watching YEARS later, in the original japanese.
