Louis finally realized that despite his past, his hatred and jealousy really stemmed from admiration of carnivores and his own self-hatred. It was his father, (and in a way the world), that told him to hold onto the hatred and use it as a power source. Seeing Legoshi, an unusual carnivore loving Haru and making his way in the world controlling his instincts, as well as being around the Shishigumi and seeing things from a carnivores' perspective that made him realize this. It's like a person realizing they actually like the culture and people they thought they hated. Also, the clothes Legoshi wore as a disguise belonged to Gouhin's wife who left him and took their kid with her because his job was too dangerous. Also, also, there were two cameos in this episode...

As far as Legoshi's fur stuff goes. The way I described it to others was that you have to think of it more like a switch that's been turned off. Legoshi, during season one where he was basically wrestling with his animal instincts constantly, repeatedly complained about how he was growing too much, how his claws would grow back practically overnight. Season one is still 'animal' Legoshi. That's where the main source of his conflicts comes from. His training with Gouhin is, in essence, turning that off. Gouhin himself said back in season one that he'd 'abandoned his inner beast', which probably was easier for him as a panda. His help with Legoshi is more or less doing the same thing for him. Hence, while he's doing his training in the back alley, his hair doesn't grow back from the impromptu trim. He's no longer that same animal once he's gone through all that. Him eating the bug is him flipping that switch back on. Instead of him following in Gouhin's footsteps, he's now told his body that 'eating other living creatures is back on the possible menu', and thus his body responds by his hair growing back out. It's more of a metaphorical display of when Legoshi is trying to become more like Gouhin, and then abandoning that path when he can't maintain it anymore. I would say that, much like how Gouhin described himself from that first season encounter, Legoshi's 'plan' is to throw himself at the problem and try to work it out. Gouhin himself said he'd been beaten up and scarred numerous times, and had only helped a handful of carnivores. Chances are, Legoshi's bound to experience the same sort of results starting out. He's probably going to get beat up. Those he's trying to help (Riz) aren't going to want that help, they're going to resist it. Considering that Legoshi's 'reason for living' as he said, was fighting for the herbivores, he's basically doing the same thing here as Gouhin did. Harking back to the 'Superman in a world of cardboard' comment Jacob made not too long ago, just remember that carnivores are built differently. It makes a little more sense that they probably do have this 'dumb' lack of fear when it comes to these things, because they basically are superhumans compared to the more mundane herbivores. It isn't a good plan to us viewers, because the vast majority of us don't have that sheer durability. Legoshi moreso than others even. As far as Louis having to 'quit', don't forget that the Shishigumi are literally a lion yakuza. It's definitely a thing you miss out on with most of the interaction with them being through the lens of interactions with Louis, but they're not simply 'Louis' buddies', or his body guards. The gang is its own established thing, and most the lions in it entered the gang intentionally, and don't simply expect to quit or retire peacefully in their old age. Look up the idea of 'Blood in, blood out', and it explains a lot of this idea fairly well, as well as Louis' entrance into the gang in the first place.
