A lot of people feel like Touch the Sky is a Blake song and I can definitely see it. The general use of piano is heavily associated with her (see From Shadows). The ending bit is definitely also another hint. The heavy drums are generally indicative of Adam and then it's taken over by the piano with a *beautiful* resolution. Of course, I'm not saying this is ironclad. Jeff generally refuses to say what songs are about and allows the fans to interpret things the way they want. I feel like Weiss is another good guess. But I think you could also argue it's just a general Team RWBY because, like you said, V7 is *very* much them being grown up and coming into their own. Hero's such a banger but it is absolutely TERRIFYING in the full context. Also, fun fact, "Mettle" is the name of his Semblance. Its effect is basically to steel his will and do whatever he sets his mind to, so that's probably what it's referencing. (I thought it was "metal" for a long while.... Meaning all of the robots and everything.) Although I personally prefer to approach this song from my own headcanon. When started writing him and Winter before even V6 aired, their relationship established itself as father/daughter. So I like to see this song as his promise to protect her from Jacques no matter what.... Like I know the one bridge section completely contradicts it but you can pull this from my cold, dead hands.
