Think of Masters like a charger and servants like a phone. Even if you unplug the charger, the phone will still work for a while before it needs a charger again. Different servants can have a different battery life. They can also harvest mana from people (usually killing them), they mention it at the end but Casters monster is going to continue to grow, and absorb the people around it enough that it won't need a master feeding it mana to sustain it.

To be honest, the fights are what I find to be the least interesting part of the Fate series and find the character interactions to be far more engaging. Having said that, HF has some outrageous fight animation.
